It’s all about plants

To celebrate the arrival on ckbk of two books by plant-based chef and culinary educator Lauren Lovatt, pastry chef Luciana Corrêa spoke to the author. The conversation covers Lauren’s creative approach, her journey to plant-based living—she first went vegan at 4 years old—and the diverse benefits of eating plants of all descriptions. Luciana talks us through both books, how they add to a complete introduction to veganism, and adds tips and favourite recipes—including the particular magic of nut butters. 

As Lauren writes in the introduction to Plant Academy: The Cookbook: Plant-based Techniques & Recipes for Creative Cooking, this is the book with all the foundational techniques and basics to get your plant-based journey started. The book is organised largely by ingredient type—nuts & seeds, beans & legumes—with other sections considering fundamental foods or recipes—the cheese module, or stocks & sauces.

In Mind Food: Plant-based Recipes for Positive Mental Health, Lauren details something of her own relationship with nutrition, and the potentially significant link with mental health for all. As she puts it:

“My route to recovery from mental illness has led me to realize what I need to do to feed my mind and, through a lengthy process of trial and error, I have been able to put basic lifestyle and nutrition knowledge into practice and understand what works best for me. After I became a professional chef, teacher and food designer, I gained a good understanding of ways to make this Mind Food life the most delicious it can possibly be and this book is my way of sharing this knowledge with you.”

Both books offer guidance for those experimenting with going vegan, and a wealth of tempting new ideas for those already converted. From Apple & Walnut Salad, via Polenta Chips with Red Pepper Ketchup, to Almond Peanut & Cacao Cookie Sandwiches you’ll want to cook from these books whatever your dietary preferences.

Veganissimo!

While we are immersing in all things vegan we have an additional treat for you. UK based Italian chef Antonio Alderuccio has been creating great gluten-free and vegan food, since being confronted with the limited options available to a friend who was both coeliac and diabetic. His book Veganissimo!: The Plant-based & Gluten-Free Italian Kitchen gathers his wisdom on the subject.

The 78 recipes are divided into the different courses of a typical Italian meal—from antipasti like Beluga Lentil Salad to dolci such as Vegan & Gluten-free Panna Cotta—and will leave you hungry, and busily deciding what to cook first.

We took a trip to Burgundy, France, in last week’s newsletter with mother and daughter Marjorie Taylor and Kendall Smith Franchini’s beautiful book French at Heart: Recipes that Bring France Home. Ingredient focus: chives

Chives are the smallest and most delicate of the onion family, looking much like a fine round-leafed grass. The fine leaves are hollow, and when cut make tiny vividly green rings. Chives impart a delicate allium flavor, so are a great garnish, addition to salads, or as a topping or inclusion for dips or sauces. They add just the right onion note to delicately cooked dishes, such as an omelette, within dumplings, or a quiche.
