If the turkey is the backbone of Thanksgiving dinner, then vegetables are the heart. At our house the feast includes one or two turkeys and anywhere from six to nine vegetable dishes. There are so many wonderful vegetables available at this time of year that choices can be difficult. We generally try to avoid these difficult decisions by making as many vegetables as we can fit on the plate.
Perhaps the best way to choose is to zero in on specific categories. For example, pick one sweet potato dish, one potato dish, one squash, one green vegetable, and one other that you just can’t resist. Another important consideration is to make sure that you have several recipes that can be prepared in advance.
