The desserts at Greens follow the same guidelines that the items on the main menu follow. Seasonality, of course, takes the forefront, meaning we enjoy citrus in the winter, rhubarb and strawberries in the spring, berries and stone fruit in the summer, and apples, pears, and persimmons in the fall. Our desserts also take a straightforward, traditional approach; it’s like home baking taken to the ultimate level of deliciousness. At any given time, you can find a delicious mix of cakes, cookies, cobblers, and custards on our menu. The recipes in this chapter are a healthy mix of what you can normally find on our menus, plus some brand-new additions for you to enjoy, like the Sesame-Brown Sugar Cookies (my personal favorite) and a breathtaking Mocha Roulade with Hazelnut-Mocha Whipped Cream.
