In a vegetarian world, it may be a bit confusing to tell what constitutes a side dish vs. an entrée. To me, a dish isn’t considered a full entrée unless it satisfies a range of textures, flavors, and components. Side dishes, on the other hand, are much more focused. I say “focused” and not “simpler” because sides are not to be underestimated! Think of a luscious corn and herb mixture topped over roasted summer peppers as a perfect accompaniment to Chipotle & Lime Grilled Tofu. In my eyes, a side dish is a way to celebrate a vegetable in its simplest form. While some sides are building blocks that support a fully composed entrée, others could turn into entrées themselves with the simple addition of a grain. Others still can be eaten just as a snack, like Asparagus with Cannellini Beans, Creamy Tarragon Vinaigrette & Pickled Mustard Seeds. Have some fun, mix and match, and enjoy these vegetable preparations however you like.
