If the French borrowed the Japanese aesthetic in creating nouvelle cuisine, the Japanese in turn have embraced the principles of French sauces. The stark look of these Los Angeles eateries—the straight-forward lighting, the marble, the neon—is the American touch, but the dishes are an amalgam of East and West.
