Sato Imo (Japanese country potatoes) are often sold as taro potatoes. Dark brown and hairy outside, they are smooth and pale gray inside. Occasionally irritating to sensitive skin, the “potatoes” are tastiest and least likely to cause irritation if peeled in a basin of cold water. When cooked, these “potatoes” have an unusually mellow flavor and soft, almost slippery texture. Store in the vegetable bin of your refrigerator if not to be used within a day or two of purchase.
