Rita de Cassia Pereira da Silva is a carioca home cook with several signature recipes in her repertoire. This fried courgette dish is one of them (carne moída, is another). She serves it as a side dish, but I find it to be so irresistibly crunchy and salty that I often eat the whole thing and call it a meal.
