Carefully skin the chicken, keeping the sheets as intact and large as possible and set aside. Place the whole, skinned chicken into a large saucepan and almost cover with water. Bring to a boil, reduce heat and simmer for 45 minutes to produce a rich, concentrated stock. Strain the stock, reserving 2 cups, and keep the chicken meat and bones for some other use.
