1 loin of pork (approximately 2 pounds)

Method

Pat the loin dry and rub all over with the diluted food coloring. Combine all the remaining ingredients except the coriander in a blender or food processor and blend on high for about 30 seconds. In a shallow dish, marinate the “red” pork with the mixture from the blender for at least 2 hours, turning occasionally.
