Even though these are quite rich, the tanginess from the passion fruit and the lime makes them a lovely refreshing way to end your special Saturday dinner.

Ingredients

For the Coconut-Crumb Base

  • 15 g desiccated coconut
  • 20 g butter
  • 50

Method

To prepare the base, heat a small frying pan, add the coconut and gently toast until golden. Tip into a bowl and then add the butter to the pan to melt. Crush the biscuits to fine crumbs, either in a sealed sandwich bag with a rolling pin or in a small blender.
