A summertime staple for my family is dudh keri, a dessert that my mom makes. She chops up ripe, peak-season mangoes, covers them with sweetened milk, and chills the whole thing. That time in the refrigerator is where the magic happens. The mangoes and the milk marry, and the mangoes become sweeter while the milk becomes ever so slightly mango flavored.
