In a large soup pot, heat the olive oil, add garlic and sauté for a few seconds. Add onions, tomatoes, bay leaf, chickpeas, pork ribs, prosciutto, bacon bones and white peppercorns. Cover with cold water and bring to the boil, skim all impurities and fat, and simmer for 40 minutes. Add all vegetables, bring to the boil, skim impurities and fat, and simmer for another 40 minutes
