Cheong’s version of Malay kampung rice is made with ghee, and he chooses to add tomato passata, cardamom, cloves, cinnamon, star anise, saffron, paprika and coconut milk to the cooked rice.
It’s a great festive rice dish – really red in colour, and perfect with grilled chicken or lamb. It’s a dish I cook at home, adapted from a recipe taken from one of my many Malay kampung cookbooks. I have a whole bookshelf of them at home, and these show that Malaysia is such cultural melting pot, having the
