Sea cucumber has great properties for building and nourishing our bodies, even though it tastes quite bland. ‘You need to build the flavour of a sea cucumber dish with a rich stock, dried scallops, Chinese mushrooms, or sweet chilli paste.’

There are several different types of sea cucumber, including the po sum variety (large and fat), or the chi sum (small and spiky). Sea cucumber requires a very specific soaking preparation over three full days, so that all of the sand, innards an
