Kohlrabi is one of those vegetables that is easily overlooked. Not to be confused with rutabaga, kohlrabi (or German turnip) looks like a root vegetable sticking its arms up in the air. They’re mostly light green but can also be purple. They’re really delicious. Peeled and raw in a salad, they taste a little like radish, but you can also quarter them and throw them in a stew.
