One of the most famous Italian sauces, pesto is served with pasta, minestrone and other dishes. Here it is accompanied by trofie, a type of pasta twirl which is still hand-made in Liguria; elsewhere the commercially produced version is very good. Another typical Ligurian pasta, trenette, is sometimes cooked with a few potatoes and green beans and then dressed with pesto. Many versions of this sauce exist; this is representative of them all.
