The name pansóti comes from pansa, a Ligurian dialect word meaning tummy. These small, tummy-shaped ravioli are filled with a typical Ligurian mixture of wild herbs and vegetables such as fresh borage, Swiss chard and dandelion.
You can substitute spinach and other greens if you like. It is most unlikely that you will be able to buy these ravioli freshly made, so make them yourself; they are delicious.
