Ingredients: 2 egg yolks, beaten with a splash of milk; 150 g lamb mince; 1 tsp cumin seeds; 1 recipe rough puff pastry; 1 tsp sunflower oil; 1 onion, finely diced; 1 lamb pluck; 1 tsp black pepper; 1 tsp nigella seeds; 1 tsp cayenne; 1 tsp salt; 1 tbsp sesame seeds; 1 tbsp allspice; 50 g pinhead oatmeal

This is a classic flavour combo and very easy to make. You’ll have some leftover haggis, but you can freeze any excess or double the pastry recipe to make lots of sausage rolls for a party.

I make these with the rough puff pastry, but shop-bought puff pastry is great if you don’t have time to make your own – just use two sheets of the ready-rolled kind.
