Apple and Cinnamon Cupcakes

When it comes to great food, there is nothing better than enjoying a cupcake with a cup of tea. And when they taste as good as my Apple and Cinnamon Cupcakes served with a fragrant tea, it’s a real win:win. This is a recipe I tested when I used to teach at a college in Southall and it was an absolute winner with the culinary arts students. I have since tweaked it a little with the addition of cinnamon, which goes superbly with the apple. It’s topped with a pecan, which finishes it perfectly
