Place 4 to 5 cubes of fish on long metal skewers or wooden skewers that have been soaked in water for 30 minutes. Set aside. In a food processor, add the oil, tomato, onion, and chili and pulse on and off until it is a smooth purée. Add the cilantro and salt to taste and pulse another second. Spoon the mixture over the skewers and set aside while you prepare a charcoal fire.
