  • 6 large egg yolks
  • 2 cups sugar
  • ½ cup water

Method

Pass the yolks through a fine-mesh sieve into a small bowl and set aside.

In a medium saucepan, combine the sugar and water and set over medium heat. When the sugar has dissolved, stir in the butter. Add the coconut milk and simmer for 1 minute.

Gradually whisk in the yolks. Swirl some of the coconut milk mixture into the bowl that held the yolks to remove all yolk residue, then
