Simnel Cake

Easter wasn’t Easter without simnel cake. I once asked Dad why there were eleven marzipan balls and he explained they represented Jesus’s apostles, minus Judas. Dad traditionally closed the shop every Good Friday to go to church and we always went for a family walk along the Wey Navigation Canal collecting pussy willow for Mum. Easter Saturday was one of the busiest days as customers bought simnel cakes, hot cross buns, chocolate Easter eggs and figurines.
