It's hard to imagine a fall harvest without an abundance of apples; from New England to Kent, England, the sweet aroma and solid crunch of this much-loved fruit inspires cooks to turn out apple pies, apple cakes, apple chutney and apple sauce galore. The apple's sweet/tart/sour flavor spectrum provides the ideal backdrop to spices too.
