This book is very personal to me. The word yatra means “journey” or “pilgrimage” in Urdu, and I wanted this book to symbolize a journey around my homeland, encompassing the many taste experiences I have had the fortune to enjoy there. India is a vast land with at least 26 different regional cuisines – discovering them is a joy.
This book features diverse and creative dishes, influenced by my favourite places, from arid Rajasthan, punctuated by grand palaces, to the rain-rich soils of Bengal; from green, luscious regions like Kerala, with its abundance of fresh vegetables, to my beloved Punjab, where they cook with heart and soul. Put them together and you have a fiery cuisine, full of life. These varied environments have shaped the culture, cuisines and flavours bursting onto people’s plates. It is the wonderful diversity of what can be found from region to region that excites me. I’ve chosen ten different areas to explore and a handful of recipes from each region offer a window into the culinary delights each extraordinary place has to offer.
