I enjoy my post-cinema channa dhal with naan, but have often found other lentil dishes to be an alarming mush and the invention of those who would also eat broccoli and pasta bake. Once on a silent retreat we were forced to eat lentils almost every day and, trying to enter the spirit of things and attempt a little yoga as well (which incidentally seems to bring on mild panic), I found the uncomfortable positions - coupled with lunch - to be a one-hour exercise in trying not to let rip. However, the exquisite tiny Puy lentil is one variety that I love dearly, consume in healthy amounts and is seemingly less windy.
