I know that’s a bold claim, but following the Whole30 guidelines for one month teaches you things about food you didn’t even know you didn’t know.

The Whole30 is a program developed by Melissa and Dallas Hartwig, founders of Whole9 and authors of the book It Starts With Food. I urge you to read their wonderful book. It clearly explains the science behind eating paleo, without getting bogged down in evolutionary details or inexplicable jargon. The heart of the book – and the program – is the fact that some foods make us healthier and some foods do not. Eat more healthy food; eat less unhealthy food.
