Seafood can be cooked in a number of different ways, but one rule applies to every method, from grilling to roasting to frying: don’t overcook it. Shrimp (prawns) are cooked when they turn pink. Most fin fish is done when it is opaque throughout and the texture is firm and flaky but still moist. The two exceptions are tuna and salmon, which are often quickly seared and eaten rare to medium-rare. When cooking any type of seafood, check it for doneness often to prevent overcooking.
