‘Make me once, eat and save some for later.’ There is something magical about traybakes. Prepare all your ingredients in different shapes and sizes – you can even spice different sections of your tray to your heart’s desire; or change the textures so you have some parts crunchy and others with softer texture; and once out of the oven you can dress with sauces, sprinklings of nuts and fresh herbs. Traybakes are so simple, there’s no excuse not to give it a go.
