What I mean by purity is a sense of balance and harmony within a dish. When all the elements come together perfectly, when the selection of ingredients and the nature of those ingredients are fully expressed through considered technique. When these ingredients work together to create something new. When flavours are intense and clear but are also balanced and in harmony with each other. When textures combine to create sensory pleasure. The idea of Organum is the magic that happens when elements are combined, leading to a sense of something new, something pure.
