In 1976 my first cookery book A Taste of Dreams was published, so titled because in the early 1970s the demands of three young children during the day gave me no time to think what to cook for adult meals and, miraculously, I began dreaming up ideas for dishes during the only peaceful time I had - my sleep. In the winter of 1977 my friend Elizabeth, who had visited India twice, was asked to do some research on the crumbling British cemeteries by an organisation who wanted to find ways of restoring them. Elizabeth had often told me that she knew I would love India and asked me to come with her; by then I was writing food pieces for the Daily Mail and I realised that the journey would provide good copy. We left England in a blizzard of snow.
