Pigeon, wood & squab, are not actually classed as game, falling into the unfortunate category of vermin: pests, that cause massive crop damage in fields of rapeseed and corn in the countryside, and mayhem in inner cities. However, these ‘flying rats’, as they are affectionately known, actually taste quite fantastic. One bird per person is usually sufficient. The soft, paler flesh is a real delicacy, although, if the ‘crop’ from their last supper isn’t removed from the neck, it causes the flesh to have a bitter taste.
