February is carnival month in Peru. The city of Ayacucho is renowned for its elaborate celebrations, marking the period of freedom and excess before the restraints of Lent. The most famous carnival foods are chicharrones, tamales, and pachamanca (a joint of meat - sometimes a whole carcass). These are all baked under hot stones in huge temporary ovens constructed in the street.
