Roast turkey for Thanksgiving dinner is as American as the Fourth of July, but nowadays it comes to the table on many other happy occasions. Even picnics: roast the bird one day, cool, refrigerate and then carry it, chilled, the next day. Carve it at the picnic spot and let everyone make his own sandwiches and help himself to potato salad.
Cooked turkey makes a splendid substitute for cooked chicken in most of the recipes in this cookbook.
