When Veracruzan cooks want a bland cheese to melt into a sauce or filling, they use queso blanco (white cheese), locally known as queso jarocho (Veracruzan cheese), a slightly more pliant uncured white cheese that is grated or cubed before being added. You can substitute domestic Muenster or a mild white cheddar cheese.
