Trying different flavours in your salad dressing is something else that can be very worthwhile. I experiment for flavour and also for colour, with things like pomegranate and blackcurrant.
Here is one example using readily available fruit juices like mango, apple, orange or grapefruit.
Mix spring greens and flowers such as claytonia and yellow rocket with very finely cut slices of raw beetroot, both yellow and conventional, and dress with a mixture of fruit juice and balsamic glaze.
