On the shores of the Kyle of Sutherland, right at the tip of the Dornoch Firth in the little village of Bonar Bridge, sits a purpose-built warehouse that you simply can’t miss. This is the premises for Ardgay Game, which has been processing and exporting wild game and venison since 1982. It has come a long way from the fridge in the garden shed, which served as the butchery for Les Waugh. He started the family business in the neighbouring village, Ardgay, when he became disillusioned with the dishonest nature of the wild game business. He was convinced that with increased access to wild game, he could pay the suppliers fairly and focus on the quality of the meat.
