Also called a bowl scraper. Rubber spatulas have a flat or slightly cupped blade that is straight across the bottom next to the handle and rounded at the top; in some styles, one top corner is round and the other is square to make it easier to get into corners. The blades are made of rubber or one of the new heat-resistant and nonstick composite materials that contain food-grade silicone, fiberglass, polyamide, or polytetrafluorethylene; these can withstand temperatures up to 500°F(260°C). Attached handles can be from plastic or wood. Some of the heat-resistant spatulas are made from one solid piece of material, which is beneficial, from a hygiene standpoint. Rubber spatulas typically have a 12-inch (30-cm) handle and a blade that measures 2 × 3 inches (5 × 7.5 cm). The heat-resistant spatulas, commonly referred to as silicone rubber spatulas, are excellent for use in the pastry kitchen. They not only can be used with very hot sugar or used to scrape the bottom of a hot pot with no danger of melting but they also do not absorb flavorings and odors they way conventional rubber spatulas do.
