The seaside city of Naples is home to the famous marinara, or “mariner’s style” sauce, consisting simply of tomatoes, olive oil, oregano, and garlic. And where mariners flocked, so did another sort: Pasta alla puttanesca is named for the “ladies of the night” and is distinguished by the addition of capers, olives, anchovies, and chiles.
