When you have one or more vegetarian dinner guests, you don’t have to make dishes especially for them; instead pick a recipe that allows you to prepare the meat or fish separately. Leave out the chicken from the soup and serve it alongside, or replace the salmon in a salad with some crumbled goat cheese. Or simply opt for a completely vegetarian menu. This way you’ll only have to cook once while also being oh so modern, because not eating any meat or fish is very au courant.
