Kataifi or kadayif is a fine pastry made by pouring batter onto a hot surface and spinning it into strands. As an ingredient it’s used in a similar way to filo – it’s just a lot more fiddly. It can be purchased from specialist online stores or found in your local Eastern Mediterranean supermarket. You may have to buy more than you need as it is sold in quite large quantities, but it freezes beautifully so you’re always ready for your next culinary adventure.
