I grew up calling this mogo as that’s what it’s called in Tanzania where it is a staple. It is a starchy root vegetable with thick brown skin and a stringy white flesh. I buy the frozen chunks or chips which have been boiled before freezing. I cook them from frozen and they defrost as they cook.
