Fresh sausages may be stored in the refrigerator for about 2 to 3 days after their initial curing period, tightly wrapped in plastic or foil. If you prefer to freeze them, be sure that they are very thoroughly wrapped in freezer paper; or enclose them in plastic, then foil, and tape the seams closed. Frozen, the sausages keep their flavor for about 2 months, after which it diminishes noticeably.
