I’ll eat coleslaw pretty much anytime in the year, tweaking the veg to whatever’s around. With just a little cheese and/or nuts this version is substantial enough to have as a light lunch; it also makes a great side, especially with sausages or leftover chicken. The apple needs a little sharpness to it and the cheese should be lively and/or salty to punctuate the coleslaw. Crushed walnuts, hazelnuts or sultanas - thrown in just before serving - all make delicious additions.
