There isn’t actually any coffee in this cake but it is so named because it is served with coffee at coffee time. Cardamom is a member of the ginger family and grows in India, but was taken back to Scandinavia by the Vikings and is more popular there than cinammon for spices used in baking. While this cake is baking, your home will be filled with tantalising aromas and you’ll be glad the Vikings introduced this wonderful spice into the baking of Norway and Sweden.
