Farmers market cauliflower has a natural sweetness that’s much more readily apparent than in the plastic-wrapped ones found year-round at the supermarket, and I really notice the difference in burgers like this one. Modeling it a bit after a cauliflower dish I remember eating a lot growing up—where it was boiled whole, then draped with a mustardy cheese sauce and broiled—I’ve paired it with tangy Dijon mustard and capers. Serve with a slice of Swiss or Gruyère cheese for something richer.</
