This is one of our go-to recipes when we’re pressed for time. It might not look like much, but the flavor is phenomenal, it’s incredibly filling, and it’s easy to prepare! Serve with rice, couscous, or millet.

Ingredients

  • 2 onions
  • 3 garlic cloves
  • 2 tablespoons peanut oil

Method

  1. Finely dice the onions. Thinly slice the garlic.
  2. Heat the oil in a saucepan over medium heat. Add the onion and garlic and cook until translucent, about 4 minutes.
  3. Cube the tomatoes and add to the pan. Reduce the heat to low and cook for 10 minutes, until the tomatoes soften.
