There are countless recipes for guacamole – some containing chopped tomato, onion and fresh coriander/cilantro, others consisting purely of avocado, salt and lime juice. This version includes some chopped tomato for sweetness and texture.

Ingredients

  • 1 tomato
  • 3 ripe avocados, halved, stoned and flesh removed
  • 2 garlic cloves, peeled and grated

Method

  1. Skin the tomato (slice a cross on the bottom, put in a bowl with boiling water to cover for 30 seconds, then plunge the tomato into cold water and remove the skin). Chop the flesh.
  2. Put the avocado in a bowl with the garlic, lime juice, salt and pepper. Lightly mash it with a fork – you still want some texture – then stir in the tomato.
