The true pissaladiere is an onion and anchovy tart from Nice. Pissalat is the ancient word for the anchovy cream spread over a bread base under a soft, thick layer of onions. Nowadays, it is more likely to be cooked on a pizza base with fresh or salted anchovies simply scattered over the top, but it is still delicious. Just be sure not to let any tomatoes spoil the experience and to have the onions as pale and slow-cooked as possible.
