Most beef in Australia is sold too young, although the feedlot beef that is now available is of high quality. As Australian graziers move into the higher quality export markets we will no doubt see a continual improvement in quality. When buying beef check to see that it is finely marbled with firm fat and that the meat is dark in colour.
