This forms the base of south-east Asian-style soups, curries and stir-fries.

Ingredients

  • recipe quantity Vegetable Stock
  • 2 lemongrass stalks, bruised
  • 1 long cinnamon stick

Method

  1. Put the stock, lemongrass, cinnamon, star anise, cardamom, cloves and ginger in a large saucepan and bring to the boil, then turn the heat down and simmer, part-covered, for 10 minutes. Remove from the heat and leave to infuse for 1 hour. Use as instructed, or cool and then chill or freeze.
